Chinese Chicken Salad from RecipeTinEats

Some recipes are just so good that I have to share them! Today, I’m featuring a delicious Asian Chicken Salad recipe from RecipeTin Eats, a site packed with incredible recipes. This crunchy, flavorful salad is perfect for a quick dinner or meal prep. I’ve adjusted the original recipe to make four servings while keeping the same great balance of protein, carbs, and healthy fats.

Ingredients

for the dressing:

  • 2 ½ tbsp light soy sauce

  • 4 tbsp rice vinegar

  • 1 ¼ tbsp toasted sesame oil

  • 2 ½ tbsp grapeseed oil (or any neutral oil)

  • 1 ¼ tsp sugar

  • 2 tsp fresh ginger, grated

  • 2 garlic cloves, minced

  • ⅔ tsp black pepper

for the Salad:

  • 5 ⅓ cups Chinese or Nappa cabbage, diced

  • 2 cups red cabbage, diced

  • 1 ⅓ cups carrot, finely julienned

  • 2 ⅔ cups chicken, shredded

  • ⅔ cup shallots/scallions, finely sliced

Garnishes:

  • ⅔ to 1 ⅓ cup crunchy noodles (La Choy)

  • 1 ⅓ to 2 ⅔ tsp sesame seeds

Instructions

  • Combine the dressing ingredients in a jar and shake well. Optional, let sit for about 10 minutes.

  • In a large bowl, mix the salad ingredients along with half the crunchy noodles.

if serving immediately:

  • Drizzle over the dressing and toss well. Top with extra crunchy noodles and sesame seeds.

for meal prep:

  • Divide the shredded cabbage, carrots, chicken, and scallions into four meal prep containers.

  • Keep the crunchy noodles and sesame seeds in a separate small bag or container to maintain their crispness.

  • Store the dressing separately in small, pre-portioned Tupperware or dressing cups to prevent the salad from getting soggy.

  • When ready to eat, simply shake the dressing, drizzle it over the salad, toss, and top with crunchy noodles and sesame seeds for the perfect texture!
