  • 1.5 lbs (24 oz) boneless, skinless chicken breast, cut into chunks

  • 2 cups Brussels sprouts, halved

  • 2 cups butternut squash, cubed

  • 1 red onion, sliced

  • 1 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 2 cloves garlic, minced

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • ½ cup grated Parmesan cheese

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp red pepper flakes (optional)

Instructions

  • Preheat oven to 400°F and line a large sheet pan with parchment paper.

  • In a large bowl, toss the chicken breast chunks with olive oil, garlic, thyme, rosemary, salt, and pepper.

  • Spread the chicken evenly on the sheet pan.

  • In the same bowl, add brussels sprouts, butternut squash, and red onion. Drizzle with balsamic vinegar and sprinkle with red pepper flakes (if using). Toss to coat evenly.

  • Arrange the vegetables around the chicken on the sheet pan.

  • Roast for 25-30 minutes, stirring halfway through, until chicken is cooked through (internal temp of 165°F) and vegetables are tender.

  • Sprinkle parmesan cheese over everything during the last 5 minutes of roasting.

  • Serve hot and enjoy!
