The Perfect Waffles
Ingredients
2 cups flour
2 tbsp. white sugar
4 tsp. baking powder
1/2 tsp. salt
2 eggs
1.5 cups milk
6 tbsp butter, melted
1 tsp. vanilla extract
Optional Toppings:
Maple Syrup
Honey
Fruit of choice, strawberries, blueberries, bananas
Nut butter
Dollop of Greek Yogurt
Powdered Sugar
Instructions
Preheat your waffle iron according to manufacturer instructions.
In a large mixing bowl, combine flour, sugar, baking powder, and salt. Mix well.
In another bowl, beat 2 eggs. Then, add milk, melted butter, and vanilla extract. Mix until all the wet ingredients are well combined.
Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Be careful not to overmix; it's okay if there are a few lumps.
Once the waffle iron is hot, spray it lightly with non-stick cooking spray.
Pour enough batter onto the center of the waffle iron to cover about two-thirds of the surface area. Close the lid and cook according to the manufacturer's instructions, usually for about 3-4 minutes, or until the waffles are golden brown and crisp.
Carefully remove the waffles from the waffle iron and place them on a wire rack to cool slightly or directly onto serving plates.
Repeat the process with the remaining batter until all 6 waffles are cooked.
Serve the waffles warm with your favorite toppings!
I like to make a big batch of these and freeze them for later. To reheat, pop into your toaster oven or microwave :30-:45 wrapped in a paper towel.
