The Perfect Waffles

Ingredients

  • 2 cups flour

  • 2 tbsp. white sugar

  • 4 tsp. baking powder

  • 1/2 tsp. salt

  • 2 eggs

  • 1.5 cups milk

  • 6 tbsp butter, melted

  • 1 tsp. vanilla extract

Optional Toppings:

  • Maple Syrup

  • Honey

  • Fruit of choice, strawberries, blueberries, bananas

  • Nut butter

  • Dollop of Greek Yogurt

  • Powdered Sugar

Instructions

  • Preheat your waffle iron according to manufacturer instructions.

  • In a large mixing bowl, combine flour, sugar, baking powder, and salt. Mix well.

  • In another bowl, beat 2 eggs. Then, add milk, melted butter, and vanilla extract. Mix until all the wet ingredients are well combined.

  • Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Be careful not to overmix; it's okay if there are a few lumps.

  • Once the waffle iron is hot, spray it lightly with non-stick cooking spray.

  • Pour enough batter onto the center of the waffle iron to cover about two-thirds of the surface area. Close the lid and cook according to the manufacturer's instructions, usually for about 3-4 minutes, or until the waffles are golden brown and crisp.

  • Carefully remove the waffles from the waffle iron and place them on a wire rack to cool slightly or directly onto serving plates.

  • Repeat the process with the remaining batter until all 6 waffles are cooked.

  • Serve the waffles warm with your favorite toppings!

I like to make a big batch of these and freeze them for later. To reheat, pop into your toaster oven or microwave :30-:45 wrapped in a paper towel.
