Classic Denver Omelet

Diced ham, bell pepper and cheese come together for a delicious, high protein breakfast.

serves well with breakfast potatoes, toast or fruit of choice!

Ingredients

  • 3 large eggs

  • 1/4 cup diced ham

  • 1/4 cup diced bell peppers (any color works, we prefer red and/or green)

  • 1/4 cup diced onions

  • 1/4 cup shredded cheddar cheese

  • 1 tbsp. olive oil

  • Salt and pepper to taste

  • Fresh chopped parsley for garnish (optional)

Optional add ons:

  • Salsa or hot sauce

  • Avocado

  • Breakfast potatoes or hash browns

Instructions

  • Start with dicing your bell peppers and onions.

  • Next, whisk the eggs in a bowl until well combined.

  • Heat olive oil in a non-stick skillet over medium heat. Add diced onions and bell peppers. Sauté until they soften, about 2-3 minutes.

  • Add the diced ham to the skillet and cook for an additional 2 minutes until the ham is heated through.

  • Push the vegetables and ham to one side of the skillet. Pour whisked eggs into the empty side of the skillet.

  • Allow the eggs to set slightly at the edges, then gently push them toward the center with a spatula, letting the uncooked eggs flow to the edges.

  • Sprinkle shredded cheddar cheese over one half of the omelet.

  • Once the eggs are set but still slightly moist, fold the omelet in half over the side with cheese. Cook for an additional minute until the cheese is melted.

  • Season the omelet with salt and pepper to taste.

  • Garnish with fresh chopped parsley if desired and enjoy! Serve with a piece of toast, fruit of your choice or breakfast potatoes.
