Peanut Butter Granola
Ingredients
2 cups old-fashioned oats
3/4 cup sliced almonds
1/4 cup plus 2 tablespoons peanut butter
1/4 cup honey
3 tablespoons vegetable oil
2 teaspoons vanilla extract
3/4 teaspoon sea salt
1/2 teaspoon cinnamon
1/3 cup dark chocolate chips
1/3 cup raisins
Instructions
Preheat your oven to 325°F. Line a large baking sheet with parchment paper.
In a large mixing bowl, combine the old-fashioned oats and sliced almonds.
In a small saucepan over low heat, combine peanut butter, honey, and vegetable oil. Stir until the mixture is smooth and well combined. Remove from heat and stir in vanilla extract. (You can also microwave these to easily mix).
Pour the wet ingredients over the dry ingredients in the mixing bowl. Add sea salt and cinnamon. Stir well to ensure all the oats and almonds are coated evenly.
Transfer the mixture to the prepared baking sheet and spread it out evenly in a single layer.
Bake in the preheated oven for 20-25 minutes, stirring halfway through. Keep an eye on it to prevent burning. The granola is ready when it turns golden brown and crisp.
Remove the baking sheet from the oven. While the granola is still warm, sprinkle dark chocolate chips and raisins over the top. Gently stir to allow the chocolate chips to melt slightly and the raisins to adhere to the granola.
Allow the granola to cool completely on the baking sheet. It will continue to crisp up as it cools.
Once completely cooled, transfer the granola to an airtight container. It can be stored at room temperature for up to two weeks.
