Cheesy Beef Enchilada Skillet

Instructions
Preheat your oven to 350°F.
Prepare the instant white rice according to the package instructions. Set aside.
In a large skillet, cook the ground beef over medium heat until it's browned and no longer pink. If using, add chopped onions and minced garlic, and cook until they're softened and fragrant, about 2-3 minutes.
In the skillet with the cooked ground beef (and onions/garlic if using), add the cooked white rice, enchilada sauce, yellow corn, and black beans. Stir well to combine and let it simmer for a few minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
Transfer the beef and rice mixture into a greased 9x13 inch baking dish. Spread it out evenly.
Sprinkle shredded cheddar cheese evenly over the top of the beef and rice mixture.
Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly.
Once done, remove the casserole from the oven and let it cool slightly before serving. Garnish with chopped fresh cilantro or green onions if desired.
