Protein Packed Tomato Basil Pasta

Ingredients

  • 8 oz whole wheat or protein-enriched pasta (Like Banza)

  • 1 tbsp. olive oil

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 1 can (28 oz) crushed tomatoes

  • 1 tsp. dried oregano

  • 1 tsp. dried basil

  • 1/2 tsp. red pepper flakes (adjust to taste)

  • Salt and black pepper to taste

  • 1 cup cherry tomatoes, halved

  • 1/4 cup grated Parmesan cheese

  • 1 cup cooked chicken breast, shredded

  • Fresh basil leaves for garnish

You can also use store bought rotisserie chicken or your preference of chicken.

Instructions

  • Cook the pasta according to the package instructions. Drain and set aside.

  • In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until they become translucent.

  • Add minced garlic to the skillet and sauté for another 1-2 minutes until fragrant.

  • Pour in the crushed tomatoes, dried oregano, dried basil, red pepper flakes, salt, and black pepper. Stir well and let it simmer for 10-15 minutes to allow the flavors to meld.

  • Add the halved cherry tomatoes to the sauce and cook for an additional 5 minutes.

  • Stir in the shredded chicken breast and cooked pasta into the sauce, ensuring the pasta is well-coated.

  • Sprinkle Parmesan cheese over the pasta and stir until the cheese is melted and the pasta is evenly coated.

  • Taste and adjust seasoning if needed.

  • Serve the tomato basil pasta in bowls, garnished with fresh basil leaves.
