Calabacitas (Mexican style zucchini squash)

Ready in 15 minutes.

Ingredients:

  • 2 medium zucchini

  • 2 yellow squash

  • 1.5 tbsp olive oil

  • 1 tsp salt

  • 1/2 tsp chili powder

  • 1/2 tsp garlic powder

  • 1/2 tsp black pepper

  • 1/2 tsp onion powder

  • 1/4 tsp ground cumin

Directions:

  • Preheat oven to 450.

  • Slice zucchini and squash into half moons.

  • Mix with olive oil and seasons.

  • Bake for 15 minutes, flipping halfway.

    Enjoy with your favorite Mexican dish!
