Calabacitas (Mexican style zucchini squash)
Ingredients:
2 medium zucchini
2 yellow squash
1.5 tbsp olive oil
1 tsp salt
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp black pepper
1/2 tsp onion powder
1/4 tsp ground cumin
Directions:
Preheat oven to 450.
Slice zucchini and squash into half moons.
Mix with olive oil and seasons.
Bake for 15 minutes, flipping halfway.
