Easter Leftover Egg Bites
Ingredients:
3-4 slices bacon, diced and cooked
12 eggs
1/2 cup heavy whipping cream
1 cup mozzarella cheese, shredded
Salt & pepper, to taste
Directions:
Pre-heat oven to 350.
Beat eggs well in a large mixing bowl. Add whipping cream, season with salt. Stir in mozzarella cheese and bacon.
Spray muffin tin generously with non-stick spray or grease/fat of your choice. Pour egg mixture into muffins, about 3/4 fullness.
Bake for 20-30 minutes until edges are nice and brown.
