Easter Leftover Egg Bites

We used leftovers from Easter Sunday to throw together these egg bites!

Customize with whatever breakfast meat or cheese you have on hand.

ready in 30 minutes.

Ingredients:

  • 3-4 slices bacon, diced and cooked

  • 12 eggs

  • 1/2 cup heavy whipping cream

  • 1 cup mozzarella cheese, shredded

  • Salt & pepper, to taste

Directions:

  • Pre-heat oven to 350.

  • Beat eggs well in a large mixing bowl. Add whipping cream, season with salt. Stir in mozzarella cheese and bacon.

  • Spray muffin tin generously with non-stick spray or grease/fat of your choice. Pour egg mixture into muffins, about 3/4 fullness.

  • Bake for 20-30 minutes until edges are nice and brown.
