Baked Blueberry Oats

Craving something sweet for breakfast?

Throw together a few pantry staples for a satisfying breakfast to last you through the week.

Enjoy with greek yogurt or cottage cheese for a boost of protein.

Ready in 45 minutes.

Ingredients:

  • 75g (2/3 cup) chopped walnuts (optional, toast for 5-6 minutes beforehand)

  • 200g (2 cups) old-fashioned oats

  • 2 tsp. cinnamon

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/4 tsp nutmeg

  • 14 oz. milk*

  • 80g (1/3 cup) maple syrup

  • 2 eggs

  • 40g (3 tbsp) butter, melted & unsalted

  • 2 tsp vanilla extract

  • 12 oz. frozen blueberries (or fruit of choice)

  • 2 tsp sugar

Directions:

  • Pre-heat oven to 375. *Optional, toast chopped walnuts for 5-6 minutes.

  • In a large mixing bowl, combine old fashioned oats, walnuts, cinnamon, baking powder, salt and nutmeg. Mix well.

  • In a medium mixing bowl, add milk, maple syrup, melted butter, and vanilla. Mix well.

  • Grease the bottom of a square baking dish. Layer the frozen blueberries (or fruit of choice) on the bottom. Top with oat mixture then wet ingredients. Shift the baking dish to make sure all the oats are covered and the milk mixture is evenly spread throughout.

  • Top with remaining blueberries and 2 tsp of sugar (if you want the extra sweetness).

  • Bake for 40-45 minutes until the top is golden brown. Top with remaining 20g of butter.

  • Portion out into 8 equal servings. Pair with greek yogurt or cottage cheese for a balanced protein. Top with additional fruit or maple syrup if desired.

  • **Cooking time will be about 4-5 minutes less if using fresh fruit.
