Cheesy Bacon Breakfast Burrito

With 32 grams of protein, this is your new favorite breakfast!

Add in what you like!

Salsa, hash browns, avocado or additional toppings of choice!

Ingredients:

  • 2 large eggs

  • 2 slices of cooked turkey bacon (or regular bacon)

  • 1/4 cup shredded cheese, cheddar or your choice

  • 1/4 cup diced bell pepper, any color

  • 1 whole wheat tortilla

  • Salt and pepper to taste

Optional add ons:

  • Salsa or hot sauce

  • Avocado

  • Breakfast potatoes or hash browns

Directions:

  • Start with cooking up your bacon, follow package instructions.

  • Then, add non-stick spray to a small non-stick skillet. Add your diced bell pepper, let them cook for a few minutes.

  • Crack the eggs into the pan, season with salt and pepper. Scramble over medium heat until fully cooked.

  • While the bell pepper and eggs cook, warm up the tortilla in the microwave for 10-15 seconds.

  • Place the cooked eggs and bell pepper in the center of the tortilla. Top with turkey bacon, cheese and additional toppings. *If you are planning on eating this later, lay a small sheet of tin foil down beforehand.

  • Fold the sides of the tortilla towards the center. Start rolling the tortilla from the bottom, tightly enclosing the filling. Continue rolling until the burrito is fully wrapped.

  • Serve with salsa or hot sauce, enjoy!

For this recipe, we used turkey bacon. Feel free to use your preferred bacon, sausage or breakfast meat. Keep in mind it will change the nutrition breakdown.

Bonus Tip: Wrap in foil after cooking if you plan on eating on the go. When it is time to reheat, take out of the foil, wrap in paper towel (if available) and microwave for 30 second increments until fully reheated.
