4 Ingredient Italian Sausage & Peppers
Ingredients:
1 tbsp. olive oil or butter
1 pound mild Italian sausage
1 bag frozen pepper & onion blend
1 tsp. Italian seasoning
Instant, microwavable rice (feel free to use non-instant rice, for ease of the meal we used 90 second rice)
Additional Toppings:
Marinara sauce
Parmesan cheese
*Can also serve on hoagie rolls, over pasta, or over roasted potatoes.
Directions:
In a large skillet, heat oil over medium high heat. (If using regular rice, start preparing it now according to package instructions.)
Add Italian sausage and cook for 5-6 minutes until the outside has browned.
Set Italian sausage aside on a different plate. Add frozen veggie mix. Cook 3-5 minutes, until mixture softens.
Add Italian seasoning, stir well to mix. Add Italian sausage back into skillet. Lower heat to a light simmer and cover with a large lid.
The sausage should be fully cooked after about 8-10 minutes. Use a meat thermometer to check for doneness, aim for 155.
If using instant rice, follow package instructions and pop it in the microwave.
This meal can be leveled up with marinara and parmesan if you have it on hand.
Serves well over rice, pasta, and on a hoagie roll.
