High Protein Veggie Scramble
Ingredients:
1 Small sweet potato, around 100g
1 Medium bell pepper
2 Medium eggs
180g Egg whites
Optional Add Ins:
Half an onion
Everything but the Bagel Seasoning
Avocado, cheese, salsa
Directions:
Stab the sweet potato 8-10 times with a knife of fork. Wrap it in a paper towel and microwave for 4-5 minutes. Exact cooking time will depend on your microwave strength and overall size of the sweet potato.
While the sweet potato cooks, grab your vegetable of choice and chop it up.
Coat a skillet or pan with non-stick cooking spray. Heat the pan over medium heat.
Add in your bell pepper, stir occasionally.
When your sweet potato is done in the microwave, roughly cut it into bite sized pieces and add it to the skillet. Let the veggie-potato cook for a few minutes.
Add in your eggs and egg whites, stirring until cooked.
Top it off with your seasoning of choice and enjoy!
