High Protein Veggie Scramble

A high protein, high volume breakfast for weight classed athletes.

With 30g of protein, this is a great base. Pair this with toast, a bagel, or wrap it up in a breakfast burrito.

Ingredients:

  • 1 Small sweet potato, around 100g

  • 1 Medium bell pepper

  • 2 Medium eggs

  • 180g Egg whites

Optional Add Ins:

  • Half an onion

  • Everything but the Bagel Seasoning

  • Avocado, cheese, salsa

Directions:

  • Stab the sweet potato 8-10 times with a knife of fork. Wrap it in a paper towel and microwave for 4-5 minutes. Exact cooking time will depend on your microwave strength and overall size of the sweet potato.

  • While the sweet potato cooks, grab your vegetable of choice and chop it up.

  • Coat a skillet or pan with non-stick cooking spray. Heat the pan over medium heat.

  • Add in your bell pepper, stir occasionally.

  • When your sweet potato is done in the microwave, roughly cut it into bite sized pieces and add it to the skillet. Let the veggie-potato cook for a few minutes.

  • Add in your eggs and egg whites, stirring until cooked.

  • Top it off with your seasoning of choice and enjoy!
