Easy Beef Burrito Bowls with Avocado Lime Crema

Ingredients

  • 1 lb lean ground beef

  • 1 cup cooked quinoa or brown rice

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 cup corn kernels (fresh or frozen)

  • 1 cup cherry tomatoes, halved

  • 1 avocado, sliced

  • 1/2 cup diced red onion

  • 1/4 cup chopped fresh cilantro

  • 1 lime, juiced

  • 1 tsp. ground cumin

  • 1 tsp. chili powder

  • Salt and pepper to taste

Optional Toppings : Fiesta blend shredded cheese, salsa, lime juice, chopped cilantro

Avocado Lime Crema

INGREDIENTS

  • 1 ripe avocado

  • 1/2 cup plain Greek yogurt (or sour cream for a richer flavor)

  • Juice of 1 lime

  • 1 clove garlic, minced

  • Salt and pepper to taste

  • Optional: a handful of fresh cilantro, chopped

Add all ingredients to a blender, blend until a smooth and creamy consistency is achieved. If the mixture is too thick, add a little water or lime juice.

Drizzle over your ground beef burrito bowl just before serving.

Instructions

  • In a large skillet over medium heat, cook the lean ground beef until browned. Drain any excess fat.

  • Add the cumin, chili powder, salt, and pepper to the cooked ground beef. Mix well to combine the seasonings with the meat.

  • In a separate pot, cook quinoa or brown rice according to package instructions.

  • Assemble the burrito bowls by dividing the cooked quinoa or brown rice among four bowls.

  • Top the grains with the seasoned ground beef, black beans, corn, cherry tomatoes, avocado slices, red onion, and cilantro.

  • Add additional toppings of choice and drizzle with lime crema or lime juice just before serving.

  • Serve immediately and enjoy!
