Roasted Salmon + Sweet Potato Bowls with Spicy Mayo

Packed with roasted salmon, sweet potato and greens, this powerhouse meal has it all.

Ingredients

for the bowl:

  • 4 salmon fillets (6 ounces each)

  • 4 medium sweet potatoes, peeled and cubed

  • 1 tbsp. olive oil

  • 1 tsp. smoked paprika

  • Salt and pepper to taste

  • 2 cups cherry tomatoes, sliced

  • 1 cucumber, sliced

  • 4 cups mixed greens (e.g., spinach, arugula, or kale)

FOR THE SPICY MAYO:

  • 1/2 cup mayonnaise

  • 1 tbsp. sriracha sauce (adjust to taste)

  • 1 tbsp. lime juice

  • 1 tsp. honey

  • Salt to taste

Instructions

cook the sweet potatoes

  • Preheat your oven to 400°F.

  • Toss the cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper in a bowl or ziploac bag until well coated.

  • Spread the sweet potatoes on a baking sheet in a single layer.

  • Roast the sweet potatoes in the preheated oven for 20-25 minutes or until they are tender and slightly golden. Stir halfway through for even cooking.

  • Roast the salmon in the preheated oven for 12-15 minutes or until the salmon is cooked through and flakes easily.

make spicy mayo sauce

  • In a small bowl, whisk together mayonnaise, sriracha sauce, lime juice, honey, and salt.

  • Adjust the level of spiciness to your liking.

assemble the bowls

  • This makes 4 servings. Divide the roasted sweet potatoes, salmon, cherry tomatoes, cucumber slices and mixed greens evenly into dishes or tupperware if using for meal prep.

  • Drizzle each bowl with the spicy mayo sauce.
